Cinnamon Buns with Brunost™ Glace

Ingredients
  • 24 Servings
  • 150 g butter
  • 5 dl whole milk 3.5% fat
  • 50 g yeast
  • 1/2 tsp salt
  • 100 g sugar
  • 1 Pcs egg
  • 15 dl wheat flour
  • 2 tsp cardamom (optional)

    Filling

  • 200 g room temperatured butter
  • 2 dl sugar
  • 3 Tbsp ground cinnamon
Here is how you do it

Instructions:

  1. Prepare the Dough:
    In a saucepan, melt the butter, then add the milk and heat until lukewarm (about 37°C). In a large mixing bowl, crumble in the yeast and pour in a small amount of the lukewarm milk mixture. Stir until the yeast is dissolved, then add the rest of the milk mixture.

  2. Add Ingredients:
    Mix in the salt, sugar, cardamom (if using), and the egg. Gradually add most of the flour, saving a bit for rolling out the dough. Knead the dough until smooth and slightly loose. Cover the bowl with plastic wrap and let the dough rise for about 30 minutes, or until doubled in size.

  3. Prepare the Filling:
    In a bowl, mix together the softened butter, sugar, and cinnamon until smooth.

  4. Roll and Fill the Dough:
    Divide the dough into two equal parts. Roll each part into a rectangle, approximately 20 x 45 cm. Spread the cinnamon filling evenly over each rectangle.

  5. Shape the Buns:
    Roll each dough rectangle tightly from one long side to the other, forming a log. Cut each log into 2 cm wide pieces. Place the buns cut side down on a baking sheet lined with parchment paper.

  6. Second Rise:
    Cover the buns with plastic wrap and let them rise for about 30 minutes. Preheat the oven to 250°C.

  7. Bake the Buns:
    Brush the tops of the buns with beaten egg and sprinkle with pearl sugar if desired. Bake in the middle of the oven for about 7-8 minutes until golden brown. Transfer the buns to a wire rack to cool.

  8. Prepare the Brunost™ Glace:
    In a small bowl, whisk together the grated Brunost™, powdered sugar, and milk until smooth and pourable. Drizzle over the cooled buns before serving.

 

Brunost™ Sauce Recipe

Ingredients:

  • 1 dl TINE® Brunost™ Sweet Spread
  • 1 dl powdered sugar
  • 2 teaspoons water

Instructions:

  1. Mix Ingredients:
    In a bowl, combine the Brunost™ Sweet Spread, powdered sugar, and water.

  2. Stir Until Smooth:
    Whisk the ingredients together until the sauce reaches a smooth, pourable consistency.

  3. Serve:
    Drizzle a generous amount of the Brunost™ Sauce over freshly baked buns, pancakes, or desserts for a sweet, creamy finish.
