  • 1000 g Whole milk
  • 150 g Yeast
  • 2300 g Flour
  • 300 g Sugar
  • 300 g Egg Yolks
  • 35 g Salt
  • 20 g Rum (optional)
  • 300 g Butter, ambient
  • TINE® Brunost™ spread or slices

    Sugar brine

  • 200 g Water
  • 100 g Sugar
  • 100 g Honey
Here is how you do it

Mix all ingredients. Knead the dough for 3 min at low speed and 6 min at high speed, in a food processor. Let rest for 15 min and then press the dough before letting it rest for another 15 min.

Roll to 3 mm thickness. Add a layer of TINE® Brunost™ spread or slices. Optional: Sprinkle with chocolate pieces (be aware they might burn). Roll and cut into 4 cm thick slices.

Put in a portion cake tin and let raise for 50 min at 38° C and approx. 75% moisture. 

Bake in oven at 180° C for approx. 10 min, depending on oven. 

While the buns are cooling down, prepare the sugar brine:

Bring all ingredients to a boil and cool down.
Optional: Add flavor or spice after own wish.
Brush the rolls with your sugar brine after baking.
